Pear Cake with "Baked" Sucre

To celebrate the beginning of fall, my son and I decided to dive into this beautiful and delicious Pear Cake with "Baked" Sucre. We are lucky to have a little more time together than usual as he is distance learning and I'm working from home. I actually used this recipe as a math and science lesson, lol. This cake is easy to make and not super sweet; perfect for brunch or weekend breakfast.

Oh, and if you are wondering what "Baked" Sucre is; it's one of our newest additions to the Spice Blend line. Think of warm baked pie, and that is exactly what this spiced sugar tastes like. It's the perfect accompaniment to this dessert.
Pear Cake with "Baked" Sucre
Adapted from Simply Recipes
2 cups all purpose flour
1/2 cup sugar
1 tsp. baking powder
1/4 tsp. salt
1 stick vegan butter
1/2 cup milk (I used oat milk)
2 eggs or egg substitute
1 tsp. vanilla or 1/4 vanilla bean, scraped
3 pears
3 tsp. "Baked" Sucre
Preheat oven to 350. Butter a 9" cake pan or spring form pan. Dust with flour; set aside.
In a large bowl, mix the flour, sugar, baking powder, salt until blended. Add the butter and use a mixer to combine into flour. In a small bowl, beat milk, egg, vanilla until combined. Add to the flour mixture and mix until smooth (batter is very thick). Spread the batter in pan; set aside.
Wash and core the pears, cut into 1/4" slices. Starting on outside rim, arrange the pear slices in a circular pattern, overlapping slightly. Sprinkle generously with "Baked" Sucre.
Place pan on a baking sheet and bake for 45-50 minutes or until tester comes out clean in the middle and edges are pulled away and golden. Let the cake rest 15 minutes before cutting.
